There are also arts & craft exhibits and other merchants that are part of this carnival atmosphere.
You will find many fine seafood restaurants in Key West. Many of the Key West fishing charters will sell their fresh catch each day to the areas local restaurants. One of the best Key West seafood restaurants in my opinion is the Conch Republic Seafood restaurant. They have an open air building and located right on the wharf. The fish are still practically wiggling on the plate when they are served. You should make sure to get there at least once during your vacation.
Another very popular Key West attraction is the Key West echo tours. With the tours you will kayak in the Key West backwaters and explore white sand beaches and desolate mangrove areas. On a Key West dolphin encounter you will observe Key West dolphins in their natural environment. Since many of the dolphins have become accustomed to people they seen to look forward to interacting with their curious human spectators.
